Bean Medley
1 lb. dried baby
lima beans
1 cup red lentils
1 and 1/2 cups snap
or snow peas
1 cup sliced
mushrooms
1 cup chopped
onions
3 cups mixed carrot
and celery juice
Wash all items.
Boil 3 cups distilled water and pour over beans. Let beans soak until water is
absorbed. (About 4 hours)
Transfer beans to
pot and add 2 cups distilled water. Cover pot and cook at low heat until beans
are half done. (About one hour)
Add the lentils,
peas, carrot/celery juice, mushrooms and onions. Mix together. Maintain heat
until all ingredients are soft.
Serves three or four.
