Greens


We all know that greens are the most healthful foods we can eat. Green vegetables are low in calories, high in fiber, and rich in nutrients. Here are some delicious recipes to help us add more greens to our diet.

 

Bean Medley

  1 lb. dried baby lima beans

  1 cup red lentils

  1 and 1/2 cups snap or snow peas

  1 cup sliced mushrooms

  1 cup chopped onions

  3 cups mixed carrot and celery juice

 

Wash all items. Boil 3 cups distilled water and pour over beans.  Let beans soak until water is absorbed.  (About 4 hours)

Transfer beans to pot and add 2 cups distilled water.  Cover pot and cook at low heat until beans are half done.  (About one hour)

Add the lentils, peas, carrot/celery juice, mushrooms and onions.  Mix together.  Maintain heat until all ingredients are soft.

 

Serves three or four.

Broccoli with Pine Nuts

  Broccoli

  Pine nuts

 

Steam fresh broccoli. Brown pine nuts on a baking sheet in the oven. Pour nuts over the broccoli.
