These delightful Walnut Cookies from Reebs prove that healthy treats can be just as satisfying as traditional sweets. Made with nutrient-dense tiger nut flour and naturally sweetened with date powder, these cookies offer guilt-free indulgence packed with crunchy walnuts and rich cashew butter. The applesauce keeps them perfectly moist while adding natural sweetness. Effortless to make with just six ingredients, these gluten-free cookies are perfect for anyone seeking a nourishing dessert that doesn’t compromise on flavor or texture.
2 cups gluten-free flour (we used tiger nut flour)
½ cup date powder (we recommend Well Your World’s date powder!)
1 cup raw walnuts, chopped
2 teaspoons vanilla extract
1 cup cashew butter
1 cup applesauce
1. Sift together the flour and date powder. Mix in the walnuts.
2. Add the vanilla, cashew butter, and applesauce, and stir well to make a dough ball.
3. Drop little tablespoon-sized cookies on a lined baking sheet and bake at 350°F for 14–16 minutes.
