The Last 10% Changes Everything
Most people who find their way to NHA Today are already doing a lot of things right. So why does it still feel like something is missing?
Dr. Joel Fuhrman has been making that argument for more than 30 years. He is a board-certified family physician, creator of the Nutritarian diet, and author of 12 books (seven of them New York Times bestsellers) including Eat to Live, Eat for Life, and Fast Food Genocide. He is also a longtime NHA member, friend to Dr. Esser, and one of the most recognizable voices in plant-based medicine.

Health Equals Nutrients Over Calories
The H=N/C equation is the foundation of Dr. Fuhrman’s work. Your healthy life expectancy, he explains, is proportional to the nutrient content and nutrient diversity of your diet per calorie. Every empty calorie you consume shortens your health span. Every nutrient-dense calorie supports it. But the equation has a second dimension that does not get enough attention: diversity. You cannot eat only kale and expect great health. The body requires a wide variety of phytonutrients, fibers, and lignans working in synergy. Diets that exclude whole food groups — no nuts, no fruit, no legumes — undermine the very diversity that makes nutrient-dense eating work.
And body fat, he adds, is not just a weight issue. It is a cancer issue. Body fat produces pro-inflammatory compounds, increases localized estrogen in breast and prostate tissue, and weakens immune function. Combined with toxicity, it creates what Dr. Fuhrman describes as a cauldron of ingredients for a cancer bomb.
The Three Foods That Beat GLP-1 Drugs
One of the most pointed moments in this episode comes when the conversation turns to GLP-1 agonists — the class of drugs currently reshaping the weight loss industry. Dr. Fuhrman is direct: your body already produces the hormones that stop overeating. The question is whether you are eating the foods that trigger them. The three foods that most powerfully activate natural appetite suppression are green vegetables, legumes (beans, lentils, pulses), and nuts and seeds. When those foods are consistently present in the diet, the overwhelming drive to overeat diminishes. The drug is mimicking a biochemical response that food can produce on its own.
An Unlikely Path to Medicine
Dr. Fuhrman did not plan to become a physician. He grew up attending natural hygiene conventions as a teenager and became passionate about using nutrition to reverse disease.
When he met his now-wife at a party, he told her that doctors just gave out poisons while people ate themselves to death. She told him that if he felt that strongly about it, he should go to medical school and change things.
He dropped his family’s shoe business, went back to Columbia for postgraduate pre-med coursework, and enrolled in medical school with a specific intention: to be an anti-medicine doctor. Hundreds of thousands of patient outcomes later, the case is made.
Before medicine, Dr. Fuhrman was a competitive figure skater. He was ranked second in the United States in pairs skating in 1973 with his sister. After an injury, he attempted a long therapeutic fast to recover, missed making the 1976 Olympic team by one place and went on to place third in the world professional championships.
The Last 10%
Dr. Fuhrman closes the episode with what he describes as his most important message for people who already know this information but are not fully applying it.
The money, he says, is in the last 10%. Doing this 80 or 90 percent of the time gets you some of the benefits. Going all the way gets you results that feel different in kind, not just degree. Your instinct to want unhealthy foods diminishes. Your body reaches its right composition. The foods you gave up stop calling your name. He compares it to professional athletics: you can be good at something, but to get the full reward out of it you have to train everything properly and go all the way.
It sounds harder. He argues it is actually easier — because the cravings that make partial commitment so exhausting disappear when you stop feeding them.
