From Acid Reflux to Empowerment: How Erin & Dusty Stanczyk of EatMoveRest Built a Life Around Whole-Food, Plant-Based Living
Erin and Dusty Stanczyk didn’t set out to become health influencers or cookbook authors. Like many couples in their twenties, they were juggling long work hours, social lives, and less-than-ideal diets — until health challenges became too big to ignore.
For Dusty, it was severe acid reflux. For Erin, it was mysterious symptoms that left her searching for answers beyond conventional medicine. Despite a family full of doctors, test results showed “nothing wrong.” That’s when they turned to lifestyle medicine — and everything changed.
A continuing education program in healthy living opened their eyes to the healing power of food. Then, a life-changing talk from Dr. Caldwell Esselstyn sealed the deal. A 40-day meat-free experiment left them feeling better than ever, and there was no turning back.
As their energy returned and Erin’s symptoms faded, they began sharing their journey online. What started as simple recipes and green smoothies turned into EatMoveRest, a thriving YouTube channel and community built on the three pillars that transformed their lives: eat whole foods, move your body, and rest your mind.
Over time, their message evolved beyond food. Hosting retreats in Costa Rica, raising three plant-based children, and writing The Happy Healthy Plant-Based Cookbook, Erin and Dusty have inspired thousands to make sustainable, joyful changes.
“We tell people to add before you subtract,” says Dusty. “Start with a green smoothie and a little more water. Those small steps can change everything.”
Their new app brings together recipes, fitness programs, and mindfulness tools — a digital extension of their philosophy that true health comes from nourishment, movement, and rest in balance.
As Erin and Dusty continue to grow their community, their story reminds us that wellness is more than a diet — it’s a lifestyle built on compassion, connection, and choice.
