Raisin-Cinnamon Oatmeal

This delicious breakfast is quick and easy to make and provides all of the heart-healthy benefits of oats without any of the artificial ingredients or sugar found in refined cereals.

8 cups unsweetened apple juice

Grated zest and juice of 1 orange

½ cup raisins

1 teaspoon ground cinnamon

½ teaspoon ground nutmeg

4 cups quick-cooking rolled oats (not instant)

Put the apple juice, orange zest and juice, raisins, cinnamon, and nutmeg in a large saucepan and stir to combine. Bring to a boil over high heat. Add the oats and stir rapidly for 30 seconds. Cover, decrease the heat to low, and cook for 5 minutes. Serve hot.

Apple-Cherry Oatmeal: Replace the orange zest and juice with 3 apples, peeled, cored, and diced, and the raisins with ½ cup of dried cherries.

Pineapple-Coconut Oatmeal: Replace the apple juice with 8 cups of unsweetened pineapple juice, and replace the raisins with 2 cups of unsweetened shredded dried coconut.
