Enjoy the delightful taste of Apple Pie Bites, perfect for a portable and easy breakfast or dessert. These delicious treats are filled with classic apple pie flavors, combining tender apple slices with warm spices in a convenient bite-sized form. Ideal for on-the-go mornings or a sweet finish to any meal, these bites offer all the comforting taste of apple pie in a simple, plant-based recipe.

Serves 2; makes 12.

Ingredients:
4 apples, chopped 
1 cup rolled oats
1 cup applesauce, unsweetened
2 teaspoons lemon juice
½ teaspoon vanilla powder
2 teaspoons Ceylon cinnamon
¼ teaspoon ground nutmeg
¼ teaspoon ground ginger
¼ teaspoon ground cardamom

  1. Preheat the oven to 350°F.
  2. Place chopped apples on a baking sheet lined with parchment paper and cook for around 15 minutes or until soft. Remove and let the apples cool to the touch.
  3. Add cooked apples into a large bowl. Smash apples gently to break them down slightly and release a small amount of liquid. Stir in the remaining ingredients.
  4. Divide the apple mixture into 12 cups in a silicone muffin tin or one lined with parchment cupcake liners. Press each one down to ensure that the bites stick together.
  5. Bake for 20 minutes. Remove from the oven and let cool completely before removing from the pan.
