I used to get the Burrito Bowl from Chipotle, and when I became WFPB, I created my own version of this delicious, simple meal. It is one of the easiest meals to put together, and it’s one you never get tired of!
SERVES 1.
INGREDIENTS
1 cup Cilantro-Lime Rice
½ cup pinto beans or black beans, cooked
½ recipe Gustavo’s Famous Fajita Vegetables
⅓ cup One-Minute Salsa (or any SOS-free store-bought salsa)
Shredded lettuce, chopped tomatoes, chopped red onions, corn, and avocado slices (optional)
DIRECTIONS
In a bowl, place the rice first, then the beans, and next the fajita mix. Serve with fresh chopped lettuce, chopped tomatoes, red onions, corn, and as an optional treat, a few slices of avocado. Finish it all off with the One-Minute Salsa and enjoy every bite!
