Fall Harvest Savory Oats

These Fall Harvest Savory Oats transform ordinary breakfast oats into a full-flavored, nutritious meal packed with seasonal vegetables and warming herbs. Creamy oats are simmered with butternut squash, kale, and green beans, creating a colorful bowl that’s both comforting and energizing. Aromatic spices like sage, rosemary, and thyme give it that cozy autumn flavor, while pepitas add delightful crunch. Perfect for brunch or any time you want a nourishing, plant-based meal that celebrates the best of fall’s harvest in every satisfying spoonful.

1 cup oats

1 cup water

2 cups veggie stock

1 teaspoon onion powder

1 teaspoon garlic powder

¼ teaspoon turmeric

½ teaspoon dried marjoram

½ teaspoon dried parsley

¼ teaspoon dried sage

¼ teaspoon dried rosemary

¼ teaspoon dried thyme

½ teaspoon paprika

2 tablespoons nutritional yeast

1 cup frozen butternut squash

3 tablespoons pepitas (green pumpkin seeds)

1 cup chopped kale

1 cup fresh green beans, chopped

½ cup frozen yellow onion

1. Add all of the ingredients to a pot and bring to a boil. Reduce the heat and simmer. If you like your oatmeal thicker, then only add ½ cup of water instead of the full cup.
