Gustavo’s Famous Fajita Vegetables

For these easy-to-make fajita veggies you will need just a few ingredients, but the result is deeply flavorful, beautiful to the eye, and satisfying. Make them to be used in the Chipotle-Style Burrito Bowl or as a side with mashed potatoes, rice, or a variety of other dishes.

SERVES 3–4.

INGREDIENTS

1 large red bell pepper, cut into strips

1 large yellow or orange bell pepper, cut into strips

1 large green bell pepper, cut into strips

2 large red onions, sliced

2 cups mushrooms, sliced

2 tablespoons of sodium-free fajita mix (see Chef’s Note) or 1 tablespoon of smoked paprika plus 1 tablespoon of chili powder

DIRECTIONS

Place the first four ingredients on a large nonstick pan on medium to medium-high heat and sauté for 10 minutes, stirring several times. You may not need to add water, but if the vegetables start to stick, add 1 or 2 tablespoons. Then add the mushrooms and fajita seasonings, mix, cover the pan, and cook for another 10 minutes until the peppers are done to your taste, stirring occasionally. If you like the peppers soft, you might need to cook the mixture for another 10 minutes. Turn off the heat and let it rest for 10 minutes before serving.
