Warm up with this Hearty Vegetable Soup, a filling and nourishing recipe perfect for the fall months. Packed with various fresh vegetables and flavorful herbs, this comforting soup provides a wholesome, satisfying meal. Ideal for cozy evenings, it’s easy to prepare and brimming with nutrients, making it a great choice for staying healthy and content as the temperatures drop.

Serves 4.


Ingredients:

4 cups of vegetable broth
2 14.5-cans of diced tomatoes
2 large potatoes, diced
2 celery stalks, chopped
2 carrots, chopped
1 small onion, chopped
¾ cup fresh or frozen corn
¾ cup fresh or frozen peas
¾ cup fresh or frozen green beans
2 garlic cloves, minced
2 bay leaves
¼ teaspoon dried thyme
¼ teaspoon dried rosemary
pinch of black pepper

  1. In a large stock pot, add all the ingredients. Stir well.
  2. On medium-high heat, bring the soup to a simmer.
  3. Cover the pot and cook on low heat until the vegetables are tender.
  4. Remove the bay leaves and serve warm.
