Ingredients:
4 cups of vegetable broth
2 14.5-cans of diced tomatoes
2 large potatoes, diced
2 celery stalks, chopped
2 carrots, chopped
1 small onion, chopped
¾ cup fresh or frozen corn
¾ cup fresh or frozen peas
¾ cup fresh or frozen green beans
2 garlic cloves, minced
2 bay leaves
¼ teaspoon dried thyme
¼ teaspoon dried rosemary
pinch of black pepper
- In a large stock pot, add all the ingredients. Stir well.
- On medium-high heat, bring the soup to a simmer.
- Cover the pot and cook on low heat until the vegetables are tender.
- Remove the bay leaves and serve warm.
