This plant-based salad delivers all the cozy, satisfying flavors of your favorite holiday leftovers without harming a single turkey! Packed with chickpeas, crunchy walnuts, tart cranberries, and fresh celery, this delicious salad captures that familiar post-holiday comfort-food vibe. The creamy tahini-date dressing ties everything together beautifully. Perfect for sandwiches or served over greens, it’s a delicious way to enjoy those nostalgic autumn flavors year-round.

2 15-ounce cans of salt-free chickpeas, drained and rinsed

2 celery stalks, diced

½ cup dried or fresh chopped cranberries

½ cup walnuts or pecans, chopped

3 green onions, chopped

black pepper, to taste

Dressing

⅓ cup tahini

¼ cup white wine vinegar

3 Deglet Noor dates

¼ cup water, or more as needed

1. Using a potato masher, mash the chickpeas in a large mixing bowl until smashed but still coarse.

2. Add the celery, cranberries, nuts, green onions, and black pepper.

3. Blend all of the dressing ingredients, adding water as needed to reach a thick, but pourable consistency. Add to the salad ingredients and stir well.

4. Enjoy in a sandwich or over a bed of lettuce.
