Enjoy a charming twist on a classic favorite with an irresistible Individual Chickpea Pot Pie, conveniently portioned into a single serving. These adorable and delicious pies feature a creamy chickpea-and-vegetable filling topped with a golden crust. Ideal for cozy dinners or entertaining guests, they offer a comforting and satisfying meal that’s both visually appealing and packed with plant-based goodness!

Serves 1.

Filling Ingredients:
3 tablespoons fresh or frozen corn kernels
3 tablespoons fresh or frozen peas
3 tablespoons chickpeas, cooked
3 tablespoons aquafaba
1 tablespoon Herbes de Provence


Topping Ingredients:
3 tablespoons chickpea flour
3 tablespoons unsweetened, unflavored plant milk
¼ teaspoon baking powder*
1 teaspoon Herbes de Provence

  1. Preheat oven to 375°F.
  2. Add all the filling items into an 8-ounce ramekin.
  3. In a small bowl, mix the topping ingredients into a batter, and pour the batter over the top of the filling.
  4. Bake for 20–25 minutes.
  5. Broil the chickpea pot pie for one minute to brown the top.
