Lentil Burgers with Homemade SOS-Free Pickles

These lentil burgers are hearty, simple, and full of good flavor, making them a great plant-based option for any meal. Served on SOS-free whole-wheat bread and paired with homemade pickles that add a nice tangy crunch, they come together into a satisfying and easy dish, perfect for a casual lunch or dinner.

Makes about 10 patties.

Homemade SOS-Free Pickles Ingredients

Note: These need to be made at least one day in advance.

1 pound (about 500 g) cucumbers, sliced

1 cup apple cider vinegar

1 cup water

1 bunch fresh dill

1 tablespoon whole black peppercorns

1. In a pot, combine the apple cider vinegar, water, dill, and peppercorns. Bring to a boil.

2. Place the sliced cucumbers in an airtight container. Pour the hot vinegar mixture over them, cover, let cool, and refrigerate for 24 hours. The longer they sit, the better the flavor.

Lentil Burger Ingredients

1 cup uncooked brown or green lentils

½ cup diced sweet peppers

½ cup diced onion

3 garlic cloves

½ cup chopped cilantro

1 cup oat flour

½ cup cornmeal

1 teaspoon dried oregano

1 teaspoon ground cumin

1 teaspoon paprika

1. Bring a pot of water to a boil over high heat. Add the lentils and cook for about 15–20 minutes, or until tender.

2. Once cooked, drain the lentils well and transfer them to a food processor. Add the sweet peppers, onion, garlic, and cilantro. Process until a smooth, homogeneous mixture forms.

3. Transfer the mixture to a bowl. Add the oat flour, cornmeal, oregano, cumin, and paprika. Mix well, then refrigerate for at least 1 hour.

4. Shape into patties. Cook in a covered nonstick pan over medium heat for about 4 minutes per side or until golden brown. Alternatively, the patties can be cooked on a grill or baked in the oven at 400°F (200°C) for 12 minutes on each side.

To Serve

Assemble your burger to taste using SOS-free bread, lettuce, tomato, homemade pickles, lentil patty, onion, and any additional toppings you like. (Try the aioli recipe!)

Chef’s Note:

Try adding slices of grilled pineapple for a tropical twist.
