This One-Pot Green Beans and Potatoes is the epitome of unfussy, wholesome comfort food that brings together fresh seasonal vegetables in one satisfying dish. Tender potatoes and crisp green beans are elevated with aromatic herbs, nutritional yeast, and a hint of tangy apple cider vinegar. The beauty lies in its simplicity—everything cooks together in one pot, making cleanup a breeze while allowing the flavors to meld beautifully. Perfect as a hearty side dish or light main course, this recipe celebrates the natural goodness of vegetables with minimal fuss.
1 onion, diced
4 cloves garlic, minced
1 teaspoon dried parsley
1 teaspoon onion powder
½ teaspoon mustard powder
¼ teaspoon dried dill
¼ teaspoon smoked paprika
1 tablespoon fresh chopped chives (or 1 teaspoon dried)
2 teaspoons nutritional yeast
2+ cups veggie stock
1 tablespoon Dijon mustard
1 black pepper, to taste
1 tablespoon apple cider vinegar
1 pound red or gold potatoes, chunked
1 pound fresh green beans
1 15-ounce can salt-free white beans, drained and rinsed
¼ cup fresh parsley, chopped
1. Sauté the onion for a few minutes over medium-high heat, adding some veggie stock along the way to keep from sticking. Add the garlic and cook for one more minute.
2. Add the next 11 ingredients to the pot (up to and including the apple cider vinegar) and give it all a stir to combine well. Then immediately add the potatoes so they are all sitting underwater in the broth to cook. Add more broth if needed to cover the potatoes just enough.
3. The potatoes will need about 10–15 minutes total to cook, so if you like your green beans well done, then spread them on top of your potatoes and cover the pot for 10 minutes. But if you like the green beans more “al dente,” then cover the pot initially without them and wait 5 minutes before spreading the green beans on the potatoes. Cover again and cook for 5 minutes.
4. Now add the white beans and parsley on top of the green beans and potatoes. Don’t stir, just cover and cook for another 5–10 minutes or until the potatoes are tender.
