These are the best snack, any time of day. They work perfectly for picnics, hikes, a dessert table, and as a hostess gift! Packed with all the goodness, none of the guilt, these are also great if you’re a busy bee on the go, as they hit all the right marks of fiber, protein, natural sugars, and healthy fats.
Yield: 20 balls
Ingredients for dry mix:
1 cup oats (gluten-free, if desired), blitzed in a high-speed blender
½ cup almond flour
⅓ cup goji berries
1 cup mixed seeds: pumpkin, sunflower, flax, chia, and sesame
Ingredients for wet mix:
12 dates, pitted and soaked in 1 cup boiling water for ½ –2 hours, then blended (both the water and the dates)
2 tablespoons peanut butter
1 tablespoon cocoa powder
1 tablespoon date syrup
1 teaspoon cinnamon
½ teaspoon turmeric
Ingredients for coating:
½ cup sesame seeds
½ cup coconut
½ cup cocoa powder
1. Mix the wet and dry ingredients together (best done using a small spatula).
The mixture should be slightly wet to the touch but still able to be formed into a big ball. Take about a tablespoon of the mix and roll it into a ball between your palms. Repeat with remaining mix. When your hands get too sticky, wet them and start again.
2. Roll the balls in coconut, cocoa powder, or the sesame seeds. Refrigerate and enjoy.
3. Stores well in the freezer.
Chef’s Notes:
• You can easily switch out the goji berries for cranberries or raisins, and adding some orange zest adds a nice fresh twist!
