These no-bake truffles are a quick, wholesome treat that combines natural sweetness with a rich, satisfying texture. Made with ingredients like walnuts, fruit, and coconut, they come together in minutes without any cooking. The result is a soft, flavorful bite with hints of cinnamon and citrus. Perfect as a snack or dessert, these truffles are nourishing, versatile, and easy to customize.

Makes 8 to 10 truffles.

Ingredients

2 cups walnuts

2 cups apple, roughly chopped

1 cup pitted dates

1 tablespoon lemon juice

1 tablespoon cinnamon

2 cups shredded coconut (divided)

1. In a food processor, combine the walnuts, apple, dates, lemon juice, cinnamon, and half of the shredded coconut. Process until well blended.

2. Transfer the mixture to a bowl and shape into balls of your preferred size.

3. Roll each ball in the remaining shredded coconut until fully coated and white.

4. These can be served at room temperature, but they are even more delicious when chilled.

Chef’s Notes:

•   For sweeter truffles, substitute the dates with dried prunes.

•   You can also roll them lightly in pure cocoa powder for a richer, slightly bitter flavor.
