
This recipe came together one day when I wanted to make something that was raw and quick. I wanted something that I could just throw together that would be delicious. The result is these beautiful gems, a mix of all my favorite ingredients!
12 pitted Medjool dates, soaked in water for 15 minutes
1 cup frozen cranberries
1 cup raw hazelnuts
½ cup raw pistachios
4 tablespoons fresh orange juice
1 tablespoons orange zest
4 tablespoons vegan dark chocolate chips
2 cups unsweetened shredded coconut, and/or
1 cup ground pistachios
1. Drain the dates and add them to a food processor along with the cranberries, hazelnuts, whole pistachios, orange juice, orange zest, and chocolate chips. Process, stopping as needed to make sure everything is wellblended. Process again until a ball starts to form.
2. Put the mixture in a bowl, and with a 1” scooper, form the mix into balls.
3. Put the shredded coconut and the ground pistachios in separate bowls. Roll the prepared balls in the coconut or the pistachios until they are covered. Both are delicious!)
4. Once they are rolled, put the balls in the freezer. They taste best when they are semi-frozen.
