Cranberry Bliss Bars feature a “buttery” shortbread crust topped with creamy icing and tangy cranberries. This homemade version of the Starbucks favorite is a real treat that satisfies your sweet tooth without impacting your health. Indulge in the delicious combination of flavors and textures in this wholesome, plant-based dessert that’s delightful for any occasion!

Makes 12.


Bar Ingredients:
1 cup oat flour
1 cup almond flour
½ cup unsweetened applesauce
½ cup date paste
½ cup dried oil-free cranberries
1 teaspoon vanilla powder
½ teaspoon baking powder*
¼ teaspoon baking soda* (½ teaspoon if using sodium-free soda)


Frosting Ingredients:
¼ cup raw cashews
¼ cup white beans, cooked
1½ pitted Medjool dates
½ teaspoon vanilla powder
3 tablespoons unsweetened, unflavored plant milk

  1. Preheat the oven to 350°F.
  2. Mix all the bar ingredients in a large bowl.
  3. In a 9-inch silicone pan, add the bar mixture as an even layer.
  4. Bake for 20 minutes. Let cool before frosting.
  5. Mix the frosting ingredients in a high-speed blender until smooth. Frost the cranberry bliss bars and top with extra dried cranberries.

* We recommend sodium-free baking soda and baking powder, such as those sold by Ener-G and Hain. Note that when using sodium-free baking soda, you must use twice as much as regular baking soda. (No adjustment is needed for sodium-free baking powder.)
