028: Super Easy, Budget Friendly Plant Based Eating with Kathy Davis

Kathy Davis, founder of VegInspired, is this week’s featured expert on the Health Science podcast hosted by Dr. Frank Sabatino. Kathy shared her inspiring journey of transitioning to a whole food plant-based diet, traveling in a fifth wheel, and helping others adopt a plant-based lifestyle.

Kathy’s journey to plant-based eating wasn’t easy, as she initially thought it would be restrictive and boring. However, after transitioning for six months, she discovered that plant-based eating opened up a world of variety, flavor, and new foods that she had previously thought were off-limits.

Eating a whole food plant-based diet has helped Kathy achieve numerous health benefits, including weight loss, better sleep, improved mood, and even reversing the markers of pre-diabetes.

Her travels in a fifth wheel have also been an essential part of her journey.

Kathy and her husband sold their house and hit the road in a fifth wheel, with their cat in tow, almost five years ago. They’ve enjoyed visiting different places and grocery stores across the country while being able to maintain their whole food plant-based lifestyle on the road.

Kathy’s work at VegInspired is centered around helping others adopt a plant-based lifestyle, with a focus on mindset and individualized meal planning.

She believes that mindset is crucial for making a successful transition and helps people change their self-image and see themselves as a plant-based eater.

Kathy provides high-touch coaching through her Eat More Plants Academy. She also offers a Meal Plan Accountability Club, helping people create meal plans that are aligned with their goals and the foods they want to eat.

During the podcast, Kathy shared her philosophy of “Eat More Plants” and “Intention over Perfection,” which are characteristics of her programs.

She encourages people to add more plants to their diets, rather than eliminating or restricting anything. Kathy also emphasizes the importance of intention and meeting clients where they are in their journey, allowing them to make changes at their own pace.

In addition to her work at VegInspired, Kathy has also collaborated on a book about using the power of visualization and vision to achieve goals. Kathy’s chapter in the book is about moving into her RV and how that started with a vision that she leveraged for months leading up to it. She believes that visualizing yourself as a plant-based eater can help you make changes that you didn’t even know you could make.

Kathy’s personal and professional journey highlights the power of taking ownership over your health and wellness and healing your relationship with food.
