This is a great salad to throw together for dinner parties or potlucks; just toss it with the dressing when you are about to serve. I grew up eating spinach salad with all the “bad stuff” in it, and this is a fantastic rewrite. The fresh horseradish gives it a really delicious kick. I love the Westbrae Naturals no-salt-added mustard; it’s pretty easy to find locally or online.
Dressing Ingredients:
1-2 cloves garlic
2-inch-square piece of fresh horseradish root, peeled
1 tablespoon mustard
¼ red onion
Half of a 14oz can no-salt-added canned white beans, drained/rinsed
2 tablespoons apple cider vinegar
Juice from half a lemon (about 2 tablespoons)
Black pepper to taste
Salad Ingredients:
1 8-oz. bag of chopped spinach (about 8 cups)
6-8 mushrooms, cremini or baby bella, sliced
Remaining ¾ red onion, sliced thin
Remaining half can of white beans, drained/rinsed
1. Add all of the dressing ingredients to your Vitamix and blend until smooth.
2. Toss your salad ingredients, along with some dressing, adding a little at a time. You may have some leftover dressing to enjoy throughout the week.
