
Summer Taco Lettuce Wraps
Summer lettuce wraps are always so enjoyable—light, easy to build, and a great way to get in extra greens. Make it a family event by creating a taco bar with all different topping options. It’s the perfect meal your family can experience creating, eating, and enjoying together!
Ingredients:
1 small yellow onion, diced
2 cups of riced cauliflower
½ cup raw sunflower seeds
1 teaspoon smoked paprika
1 teaspoon garlic powder
2 teaspoon white miso
1/8 teaspoon black pepper
1 tablespoon chili powder (optional)
½ lime, juiced
1 15-oz. can of black beans, rinsed and drained
1 cup corn
Lettuce cups or romaine lettuce leaves
1. Water sauté the diced yellow onion in a large skillet until translucent.Add riced cauliflower, sunflower seeds, seasonings, white miso, lime juice, black beans, and corn to the sauté pan.
2. Cook on medium heat for around 5-7 minutes.
3. Place a spoonful of the taco mixture into each of the lettuce cups (or romaine lettuce leaves).
4. Garnish with tomatoes, green onions, jalapeños, or salsa.
Makes 20-25 wraps
