Although this looks like a salad, in Well Your World we use it like a sauce, and in no small amounts. I generally make five times this recipe at a time and store it in mason jars in the fridge for 3-5 days. If by some miracle I haven’t eaten it before it starts to get a little soggy, I’ll cook it up with some beans on the stove. If you don’t feel like chopping, chunk everything and pulse it a few times in the food processor to make a finer textured salsa instead.

4-5 Roma tomatoes, cored and diced

half red onion, diced small

3-4 jalapeño peppers, cored and diced small

2 teaspoons minced garlic

Juice from 2 limes

¾-1 bunch cilantro, chopped

Add everything to a big bowl and mix it up. I like to let it sit for 30 minutes, stirring every 10 minutes, to allow the flavors to blend. Serve this on top of beans and rice, or anything else you like. I apologize in advance for your new pico addiction.
